Western Ham Frita

Servings: 6  |  Preparation Time: 10 minutes  |  Cooking Time: 20 minutes

Ingredients

1 ½ cups ham, diced
4 tsp margarine
1 ½ cups cubed PEI potatoes, fried
6 large eggs
½ cup peppers, diced
½ cup onions, diced

Directions

  1. Place margarine in large frying pan over medium-high heat. When butter foams, add ham and potatoes. Stir and turn occasionally until nicely browned.
  2. Meanwhile, beat eggs until frothy.
  3. Flatten ham and potato mixture in the pan with a spatula and pour eggs evenly over all. Gently part the eggs so some of the mixture falls to the bottom of the pan.
  4. Reduce heat to medium-low and cover.
  5. Cook until eggs are firm (about 10 minutes).
  6. Serve with a generous serving of seasonal fresh fruit.
