• 3 cups (750 mL) rotini pasta
• 1 tbsp (15 mL) olive oil
• 2 cloves garlic, minced
• 1 medium onion, chopped
• 8 oz (250 g) mushrooms (white, cremini, shiitake), sliced
• 1 pkg (8 oz/227 g) Clover Leaf flaked crab-flavoured seafood
• 3/4 cup (175 mL) dry white wine
• 1 1/2 cups (375 mL) cut green beans (fresh or frozen)
• 1/4 tsp (1 mL) each dried thyme leaves and salt
• 1/2 cup (125 mL) light sour cream
• 1 tbsp (15 mL) all purpose flour
Cook pasta according to package directions, omitting salt.
Drain. Meanwhile, heat oil over medium-high heat in large skillet. Sauté garlic, onion and mushrooms 5 minutes. Stir in crab, wine, beans, thyme and salt; bring to boil and simmer 2 minutes until beans are just tender. Mix sour cream and flour; add to skillet. Cook and stir until thickened. Spoon over hot pasta.
Serve with grated Parmesan cheese, if desired.
Hint: Use a variety of wild mushrooms for interesting flavour and texture. When using shiitake mushrooms, discard the woody stems. A simple one dish pasta sauce that cooks the same time as the pasta. Ideal for entertaining.
