Clementine, Avocado, Celery and Radish Salad

Ingredients

4 clementines
1 large avocado, diced
2 stalks celery
2 radishes
¼  tsp. kosher salt
Fresh ground multi colored or black pepper to taste
2 to 3 Tbsp. Balsamic syrup

Directions

  1. Peel clementines and divide into segments.  Note:  peeling and dividing segments with pith is more nutritious.
  2. Peel and dice avocado.
  3. Julienne (2 inches long) or slice celery cross wise.
  4. Julienne radishes.
  5. Place vegetables in bowl and toss with Balsamic syrup.
  6. Add salt and freshly ground pepper to taste. Serve chilled.

Balsamic Syrup
If you cannot find Balsamic syrup in your grocery store, you can make it by reducing 2 cups of balsamic vinegar down to about 6 Tbsp. or 1/3 cup in a stainless or enamel sauce pan, being careful not to burn it. Cook down on medium high heat
